Simple Avocado Toast

  • 2 slices of toasted bread
  • 1 ripe avocado
  • salt to taste
  • toasted sesame seeds (optional)
  • a splash of lemon juice
  • pinch of cayenne pepper
  • 1-2 eggs cooked any style
  • 1slice of smoked salmon, or 2 slices of grilled halloumi cheese, or few slices of mozzarella cheese (optional)


When in doubt-always make an avocado toast! 🙂

If you are not sure what to serve yourself for breakfast, or lunch, or dinner….. or just need a good snack – this is for you!

Toast some good quality bread, preferably whole grain. Mash an avocado with a fork, spread on the toast. Add a splash of lime or lemon juice, salt, a touch of cayenne and a sprinkle of toasted sesame seeds.

Serve with some poached, scrambled or fried eggs. Can add some smoked salmon or grilled halloumi cheese on the side, or just a simple mix green salad with Balsamic dressing.
