Ingredients

  • 300 gr small scallops (sushi grade!)
  • juice of 1 lime
  • juice of 1 lemon
  • 1 red chili finely chopped
  • 1/2 small red onion finely chopped
  • bunch of fresh coriander, chopped

Preparation

Cut the scallops into small pieces. Put in a glass bowl with lime and lemon juice and dices chili. Mix well, cover and leave for at least 2 hours. Scallops have to turn opaque. Once ready, add chopped onion, coriander, mix and serve. You can serve ceviche with a simple salad and a sliced avocado or oven roasted sweet potato chips.
